Update
We are both just working away our summer:( It is going way to fast I can't believe it is halfway through June already! Things have been going good though. Here are a few things we've done lately... we went to my step-brother's wedding last week, helped my brother move into his new house in Toquerville (well Bode did), became a great aunt & uncle again (she is super cute!), and if all goes to plan building a house very soon! I'll have to keep you posted!
Taylor Swift Concert
I went to the Taylor Swift concert with my sister in law and one of their friends. We had like the worst seats in there ha ha, but it was still fun. I think i liked it alittle bit more than i should considering it was definitely directed to a high school audience (sometimes i think i'm suppose to be 17 still and not 22!) She put on a way good show and is super good live. Another really cool thing is that my sister in law won a pink scooter at the concert... very random, but it totally made our night.
(Ignore my super cheese face ha ha)
(There she is way way down there ha ha)
Taste of Home I've had some extra time on my hands, since school is out i don't see my classmates anymore and pretty much all of my friends have moved away (not that i had a whole ton to start out with), I've decided to try to feed Bode some home cooked meals. My grandma has sent me the Taste of Home magazine for quite a while now, so i decided i better put it to good use. I picked a few recipes went to the store and have been cooking ever since ha ha ok not really. Here are the meals I made....
Cheesy Chicken & Broccoli Bake
1 pkg Stove Top stuffing mix Chicken flavor
1-1/2 lbs boneless skinless chicken breasts cut in to bit size pieces
1 pkg of frozen broccoli
1 can of cream of chicken soup
8 oz of Velvetta cheese cut into 1/2" cubes
Heat oven to 400F, prepare stuffing mix as directed on pkg and set aside. Combine remaining ingredients; spoon into 13x9 baking dish. Top with stuffing and bake 40 minutes or until chicken is done.
I didn't get a picture of this one, but I thought it was good just another casserole kinda dish but really easy to make, Bode really liked and ate all of the leftovers. This is a remake dish.
German Pork Roast
3 tbs olive oil
4 garlic cloves, minced
1 tsp lemon juice
1 tsp ground mustard
1 tsp of salt
1/2 tsp oregano, thyme, and rosemary
1/4 tsp pepper
1 boneless whole pork lin roast (3-4 lbs)
4 medium potatoes, peeled and cut into wedges
3 medium onions, cut into wedges
1 medium yellow tomato, cut into wedges
In a small bowl, combine oil, garlic, lemon juice, mustard and seasonings, Rub over roast. Place on a rack in a shallow roasting pan. Bake uncovered, at 350 for 20 minutes. Add potatoes, onions, and tomato to the pan, bake at 40-70 minutes or until thermometer reads 160 and veggies are done.
I didn't get a pic of this one either, I thought it was good, I didn't like the veggies and i left out 2 onions and the tomato, because me and bode aren't big fans of those. I think next time I'll cook it in the crock pot, i think it will be more tender. Bode really like the flavor of it, he votes that this is a remake dish in the crock pot.
Pork in orange sauce
1 cup uncooked rice
2 tsp cornstarch
1 tsp sugar
1 tsp ground ginger
1 tsp grated orange peel
1 cup orange juice
1 tsp soy sauce
2 celery ribs, chopped
2 medium carrots thinly sliced
1/4 cup lightly salted cashews
1 tbs canola oil
2 cups cubed cooked pork
1/2 cup chow mein noodles
1 green onion, julienned
cook rice according to pkg. Meanwhile in a small bowl, combine cornstarch, sugar, ginger, and orange peel. Stir in orange juice and soy sauce until smooth; set aside. In large skillet, stir fry the celery, carrots, and cashews in oil until veggies are tender and crisp. Stir in cornstarch mixture to pan. Bring to a boil; cook and stir for 1 min or until thickened. Add pork; heat through. Serve with rice; top with noodles and onion.
I used the left over pork from the roast, i liked the sauce, but like half way through i decided i didn't like it anymore. Bode liked it but decided that it wasn't a remake dish.
We really like this recipe! It is super good and its nice to have some lasagna in the freeze to have when we are out of food! Definitely a remake though we won't have to for like 3 months!
Well I definitely think I overloaded the blogging world with recipes! If you try any of them, Enjoy!! Thanks again Grandma for the magazine i'm definitley putting it to good use!
